- Homemade Pizza Sauce (Enough for 5 to 6, 10" Pizzas)

Ingredients:- 1 Carton Tomato Passata
- Tablespoon Olive Oil
- Rock Salt (to taste)
- Freshly Ground Pepper (to taste)
- Finely Chopped Fresh Oregano (to taste)
- Splash of Hot Sauce or Balsamic Vinegar
- ½ teaspoon Demerara sugar
Steps:- Add all the ingredients into a thick base saucepan, and simmer over very low heat for 30 minutes, until the sauce has developed a thick consistency – preventing the pizza base from getting soggy.
- Masala Chicken Tikka (Serves 4)

Ingredients:- 4 pieces of Chicken Breast
For the Marinade, you will need:- 5 tablespoons plain yoghurt
- 3 cloves of garlic
- Small piece of ginger (3-4cm)
- 2 medium green chillies (to taste)
- Chopped Coriander (100g)
- Tablespoon Olive Oil
- Teaspoon Chilli Powder (to taste)
- Teaspoon Roasted Cumin Powder
- Salt (to taste)
- Teaspoon Garam Masala
- Tablespoon of Lemon Juice
Steps:- Put all above ingredients in a blender or food processor and continue to blend together until a smooth paste is formed.
- Wash and dice the chicken into small pieces (approx 4cm) and combine with the marinade paste in a bowl. Coat the chicken thoroughly with the marinade, massaging the paste into the chicken.
- Cover the bowl and leave in a refrigerator for 2-3 hours or longer if you have time. Overnight is best!
- Skewer the chicken pieces and alternate with sliced red and green peppers.
- Ensure that the charcoal is white hot before grilling.
- Brush the chicken and peppers with olive oil before placing the skewer on the grill.
- Rotate skewers throughout the grilling to ensure chicken is cooked evenly. Never serve undercooked meat.
